Use a chef’s-favorite Silpat sheet or grease a sheet of parchment paper for extra insurance) creates a bubbly, golden-brown tuile that firms up into a delicious crisp. But while they’re still warm, the melted cheese is as pliable as Play-Doh, easy to mold into any shape you like.
