Give your fresh pasta the rainbow treatment with these all-natural homemade dyes!
Don’t be intimidated – this couldn’t be easier! The only difference between colored pasta and regular pasta is adding a brightly-colored puree or juice while you make the dough, and then the rest of the process is completely the same (just a lot prettier!) The best part about it is that these three methods of pasta-coloring are derived from super healthy ingredients.
How do we turn food pink? We either pickle it or add beets – and since we aren’t about to make pickled pasta, beets it is! Simply steam beets (or buy them pre-steamed!) And puree them in a food processor until smooth, and add three tablespoons of puree to Giada’s pasta recipe. If the dough comes out sticky, simply add more all-purpose flour.
Not only do you make your pasta prettier this way, but you get a little bit of superfood goodness! Sautee the spinach until wilted to release excess water, then give it a blitz in the food processor until smooth. Add three tablespoons of puree and watch the magic happen as you knead the dough.
Fresh pasta will already have a naturally yellow hue, but this bumps it up into seriously golden ochre territory. We turn to turmeric, which has a naturally earthy flavor and loads of anti-inflammatory health benefits. Add just 2 teaspoons of the ground spice and 4 teaspoons of water to the dough to make some beautiful bright yellow pasta!
