DIY Fondant Roses with Duff Goldman

Pick out one of Duff’s delicious cakes or cupcakes, and you’re given all the tools (plus a helping hand from the skilled pros on staff!) to turn it your own masterpiece. It’s a fun way to spend a day with the kids, and is an absolute hit for parties – Jade had a birthday party here a few years ago and adored it!
I visited the studio for a lesson in crafting fondant roses, an elegant cupcake topper that looks way more complicated than it is. Fondant is a professional pastry chef’s secret weapon, the way to get perfectly smooth cakes without stressing over crumbs in your buttercream and make all kinds of 3-D decorations. Think of it as edible Play-Doh! You can find it at big craft stores like Michael’s, or even Walmart, but if you’re in a pinch, you can use this trick Duff’s crew taught me to make your own using a grocery store basic: marshmallows. Being a cake decorator and having all the Wilton classes and the whole shebang I can say that I am SO OVER having to struggle so much in making buttercream roses for things. I have seen so many neat, and EASY ways to make roses just as lovely coming into fashion in the last year or to as those that everyone struggles with in the buttercream. I am however a bit baffled about one thing and this is having the fondant SO THICK. This goes against the norm of everything most people are taught. I'm curious why not roll them thinner. I'm curious and impatient to try this but then I want to also make the fondant much thinner to see what happens. This is just about as easy as the new rose "mold" you see everywhere now that is also rolled. I'm going to go ahead and jump to conclusions here and assume this very same thing will work with gumpaste or more often, a mixture of gumpaste and fondant. Doing this you sometimes get the best of both worlds. This was great, I loved this little tutorial, we need many many more of them.
