A perfectly braised short rib is one of life’s greatest food joys – seriously! The meat becomes so impossibly tender, and it soaks up tons of flavor from a rich sauce with a secret ingredient: cocoa powder. It adds a great amount of depth and warmth, making this a dish that’s just as cozy as it is impressive.
Everything that makes this dish amazing is in the sauce. Sauteed onions, garlic and carrots get doused in red wine, tomato paste and cocoa powder to add some amazing aromatics. Hunt’s San Marzano-style tomatoes get hand crushed, and join the slow cooker party too. The sweet, bright flavor of Hunt’s tomatoes plays so well alongside the decadent short ribs – it balances the dish perfectly! Don’t skip adding a Parmigiano rind, either – it gives everything a ton of umami flavor you can’t get from anywhere else. (If you don’t have any saved in the freezer, head to a grocery store with a cheese counter – they’ll often sell rinds for a very low cost!)
Of course, the best part of this whole dish is that after some prep work, it all happens in the slow cooker. Set it to high for 4 hours or low for 6, depending on your preferred timing. You can relax and get ready for hours before your Valentine’s day plans, and you’ll have some perfectly cooked short ribs awaiting you when the time comes!
