Tomatoes are the backbone of Italian cooking, and one of summer’s greatest treats, especially if you’re lucky enough to have room for a tomato plant or two on your balcony or backyard. The problem is, the riper they are, the harder they are to slice! Any pressure you apply to these delicate beauties as you cut through their skin can turn them to mush in an instant.
Serrated knives or Japanese santoku knives can be helpful, but all you really need is your trusty chef’s knife – as long as it’s sharp. Just remember to lightly draw your knife across the tomato in a sawing motion, rather than pressing straight down. Once you’re in, discard the watery seeds and follow these two steps to use your tomatoes in just about any recipe.
