Vanilla-Lime Spritzer

In a cocktail shaker, muddle the lime wedge and mint leaves to release the juices and oils. Add the agave nectar, vodka, and 1⁄2 cup of ice and shake for 30 seconds. Strain into a tall glass filled with ice. Top with club soda and serve.
Cook’s Note: To make vanilla-infused vodka, place 3 whole vanilla beans in a 750 ml bottle of plain vodka. Place the bottle in a cool dark place for at least 10 days to allow the vanilla flavor to infuse the vodka. Open the bottle occasionally during the infusion time.
