Shrimp and Grapefruit Skewers
These shrimp and grapefruit skewers are such a fun appetizer for a summer barbecue. The grilled shrimp paired with bitter grapefruit is a wonderfully unexpected combination. Topped with a dressing made of fresh mint, Calabrian chili, grapefruit juice, and olive oil, these simple skewers are packed with flavor.
While you’ve got the grill out, make it a full meal! These skewers would be a great appetizer for my rosemary garlic chicken burgers, or even my favorite grilled pizza.

INGREDIENTS:
For the Dressing:
- 1 tablespoon chopped mint
- 1/2 teaspoon Calabrian chili paste
- 1 teaspoon grapefruit zest 1/2 grapefruit
- 2 tablespoons grapefruit juice half of a grapefruit
- 2 tablespoons extra virgin olive oil
- 1/8 teaspoon kosher salt
For the Skewers:
- 1 pound large shrimp peeled and deveined (16/20s)
- 1 grapefruit peeled, segments removed and halved
- 1/2 teaspoon kosher salt
- 2 tablespoons extra virgin olive oil
- 10 6inch bamboo skewers
INSTRUCTIONS:

- In a small bowl, whisk together the mint, chili paste, zest, juice, olive oil and salt. Set aside to let the flavors marry.
- Preheat a grill pan over medium high heat.
- Skewer one shrimp in a C shape, followed by a grapefruit segment. followed by another shrimp. Continue with the remaining skewers,shrimp and grapefruit segments. Sprinkle the salt evenly over the skewers and drizzle with the olive oil.
- Place skewers on the hot grill and grill for about 3 minutes per side or until cooked through and opaque. Spoon the dressing over the shrimp and serve.
