Antipasti Skewers
These easy antipasti skewers are endlessly customizable — make a set of meatless skewers with different cheeses, olives, and roasted red pepper for vegetarians, or just salami and cheese for picky kids — and are easier to hold in one hand than a plate of snacks, perfect for a standup cocktail party.

INGREDIENTS:
- 6 mozzarella cheese ciliegine
- 1 tablespoon extra virgin olive oil
- 1/8 teaspoon dried oregano
- 1/8 teaspoon kosher salt
- 6 cherry tomatoes
- 6 green olives
- 6 Thinly sliced salami rolled
- 3 piquillo peppers halved lengthwise
- 2 roasted yellow peppers sliced into 6 strips and rolled
- 6 kalamata olives
- 12 basil leaves
- 6 quarters of marinated Artichoke hearts
- 6 -8 inch skewers
INSTRUCTIONS:
- In a small bowl toss together the mozzarella, olive oil, oregano and salt. Working with one skewer at a time, thread a cherry tomato, followed by a basil leaf, marinated mozzarella ball, green olive, salami, piquillo pepper half, yellow pepper roll, kalamata olive, another basil leaf and artichoke heart. Serve on a platter.
