For such a memorable dish, it’s surprising that it’s a relative newcomer to the pasta canon! It only becomes popular in Naples in the 1950s, and there are a number of stories about its origin, most of which are for adult ears only (puttanesca loosely translates to “lady of the night”). Whatever its history, it’s beloved for delivering strong, punchy flavor quickly—perfect for a weeknight dinner when you don’t want to sacrifice taste. Capers: Unlike the capers you find here in the U.S., Italian capers are dry-packed in salt to concentrate their tart, umami flavor—just give them a quick rinse before using.
