Since 1817, the Gradassi family have been making olive oil at the foot of the Marfuga hills from which this artisan olive oil gets its name. Their estate in the Spoleto valley is some of the most fertile land in the central Italian region of Umbria and is home to more than 12,000 olive trees, many of which are over a century old. This olive oil has a fresh and herbaceous aroma, with dominant notes of artichoke and thistle. Its balanced bitter and spicy notes give way to a deliciously complex vegetal flavor, with a mild finish of green almond.
