Intensely flavored with the heat of the Mediterranean sun, these dried chile peppers are a piquant taste of the island of Pantelleria, a rocky outpost off the southwest coast of Sicily near Tunisia. With dramatic volcanic craters and hot springs, the island’s landscape is forbidding to all but the most sun-loving plants—luckily, this includes peppers! The combination of the unique nutrients found in Pantelleria’s volcanic soil and that intense southern heat gives these peppers an extraordinary heat and complexity of flavor you won’t find anywhere else. They’re sundried and roughly crushed, ready to be used as-is or chopped further to incorporate smoothly into your favorite spicy dishes.

Drying foods in the sun is an ancient technique for preserving the flavors of summer for the long winter months. The sun's heat slowly concentrates the food’s natural essence as its water evaporates, leaving an intense, bolder flavor experience in a small, easy-to-store package. These dried chile peppers have a fruity undertone and bold umami notes, similar to a sundried tomato, but with plenty of heat!

Run by three brothers from Pantelleria, Kazzen is dedicated to sharing the unique bounty of their home with the rest of Italy and the world. A true labor of love, Kazzen uses traditional methods and recipes to continue the flavorful legacy of their island. Their motto is “specialità dell’isola”—specialties of the island—and their capers, oils, and delicious sauces and spreads will bring a taste of Pantelleria to your home.

These crushed chili peppers are fruity and bold, with a medium spice level that will add a pleasant heat to any recipe. Use them in a traditional penne arrabiata, the spicy tomato sauce that’s beloved in Rome, or in your favorite chili recipe. Sprinkle the dry pepper flakes directly over fresh-out-of-the-oven pizza for a delicious kick.
