Organic Bucatini Pasta: On first glance, this organic bucatini from Zaccagni looks like a chunkier spaghetti. But look closer, and you’ll see that it’s hollow—the name is derived from the Italian word buco (“hole”). This straw-like shape has a clever double purpose: In addition to soaking up sauce for extra-flavorful bites, the hollow center also ensures that the thick pasta cooks evenly inside and out.

Nodi Marini Pasta: Nodi marini ("sailor's knots") from Setaro are loosely twisted coils of pasta, so named because they resemble the complicated rope knots that all sailors must know. One of Giada’s favorite shapes, she discovered it on a trip to Italy and was determined to bring it back to the U.S.! In Puglia, it’s sometimes known as molloni (“springs”), while in parts of Naples it’s known as vesuvio, in honor of the great volcano Vesuvius that towers over the region. No matter what you call it, each knotty bite is a delight.

Fusilli Corti Pasta: Setaro’s fusilli Corti is not your everyday fusilli! These perfect corkscrews are so named because they were traditionally made by hand by deftly wrapping each strand around a knitting needle or spindle (fusilli comes from the word fuso, or spindle). Now, they’re produced on traditional bronze dies in the Setaro family factory in a process that’s a little less painstaking but no less delicious. It’s a whimsical shape that’s hard to find in the U.S. and is only made by a few Italian pasta producers.

Organic Arrabiata Sauce: With a jar of this organic arrabbiata sauce from Bio Orto in your pantry, you’ll have a delicious dinner ready in as much time as takes to boil pasta. It starts with ripe tomatoes from Puglia, the “heel” of Italy’s boot, where the southern heat is tempered by cool breezes from the surrounding Mediterranean Sea. The tomatoes’ natural sugars are concentrated by long hours in the sun, giving them a well-balanced flavor profile that sings with ripe sweetness and umami goodness. They’re cooked with organic olive oil, spicy chiles, and plenty of garlic to capture the essence of this beloved Italian dish.

Even more highly prized than the famous San Marzano, they have a distinctive sweet-tart profile that can’t be beaten. They’re Giada’s pick for sauces that need to sing with pure tomato flavor.
