One of the few companies that manages the entire production process, from growing the rice to harvest, milling, and packaging, Cascina Belvedere is absolutely dedicated to the very best rice and risotto. All that care results in a pretty incredible product! This short-grain rice is firm, plump, and gracefully rounded. It cooks up into creamy, luscious risottos thanks to its high starch content, while never becoming mushy or gluey.

Arborio rice is the most variety most commonly used for risotto, and its grains are the largest of the rice varieties grown in Italy. It grows in the northwestern Piedmont region of Italy, which shares a border with France and Switzerland. The Piedmont is reknowned for its agricultural bounty, and is home to decadent specialties including white truffles, barolo, and highly prized rice.

Rice farmers in the Piedmont for generations, the Picco family have been operating Cascina Belvedere in Bianzè, north of Turin, since 1935. The family-owned business is passionate about the welfare of their land, and their farming practices are designed to protect the natural beauty and bounty of their home while delivering an outstanding product. They use the sovescio technique to keep their soil healthy and full of nutrients, eliminating the need for chemical fertilizers during the growing season. Once it’s harvested, the rice goes through a traditional stone-husking process to preserve more of the nutrients and flavor of each individual grain. It’s then milled in small batches to ensure the highest quality control.
Arborio is a short-grain rice that becomes creamy as it cooks while still retaining each individual grain’s shape. Use this organic arborio to make risotto, arancini, and rice timbales such as Sartu di Riso.
