Nodi Marini Pasta: Our organic nodi marini ("sailor's knots") are loosely twisted coils of pasta, so named because they resemble the complicated rope knots that all sailors must know. One of Giada’s favorite shapes, she discovered it on a trip to Italy and was determined to bring it back to the U.S.! In Puglia, it’s sometimes known as molloni (“springs”), while in parts of Naples it’s known as vesuvio, in honor of the great volcano Vesuvius that towers over the region. No matter what you call it, each knotty bite is a delight.
Crushed Calabrian Chili Paste: With a mellow, fruity heat that lingers on the palate but won't overwhelm, there's just no substitute for this crushed Calabrian chile paste from Tutto Calabria. The quintessential Italian chile, they are beloved around the country for the lively heat they bring to any dish. Similar in Scoville level to cayenne but with a depth of flavor unlike any other, this paste of fresh chiles crushed and preserved in olive oil is a must-have for any spice lover’s pantry. It’s one of Giada’s essential Italian ingredients.
Corbara Pomodorini Whole Tomatoes: These whole, unpeeled pomodorini (“tiny tomatoes”) in tomato sauce from I Sapori di Corbara are bite-sized, bell-shaped cherry tomatoes grown near the Amalfi Coast. Even more highly prized than the famous San Marzano, they have a distinctive sweet-tart profile that can’t be beaten. They’re Giada’s pick for sauces that need to sing with pure tomato flavor.
Oregano Bunch: No Italian pantry is complete without a steady supply of oregano, and this dried oregano is a beautiful way to stock up. This organic oregano is grown on a small family farm in Sicily and dried right on the branch, so there's no doubt about what you're getting.
Organic Ogliarola Extra Virgin Olive Oil: Graceful and golden, this organic Ogliarola olive oil from Bio Orto is a love letter to Gargano, a highland sub-region of Puglia where it is made. Mild and fruity, with a velvety softness and just a touch of spicy and bitter notes held in perfect harmony, it’s a mellow stunner that will make a welcome addition to your kitchen arsenal. This oil is made only using Ogliarola olives, a variety also known as Paesana that is a Pugliese favorite. It is a bit of a chameleon and expresses the terroir of each region where it is grown, developing vastly different flavors depending on its surro
