Over the centuries, saffron has been used as a dye, a flavoring, and even a currency! In Umbria in the 13th century, saffron was considered more valuable than the money of the time and was used in its place. The spice is so special because of how it's cultivated: These rich red threads are the stigma in the center of a variety of vibrant purple crocus known, naturally, as the saffron crocus. Every flower only has three threads of saffron, which have to be harvested by hand and gently toasted to preserve their color and fragrance. Roughly 3,000 flowers will produce just one ounce of saffron! It's a truly special ingredient that doesn't just add a beautiful aroma and color to a dish, but showcases a spirit of generosity and celebration.
