Everything about this special pasta is an ode to the northern Italian region of Piedmont: the shape of the pasta, Tagliolini, is somewhat thicker than spaghetti and a specialty of Piedmont. Barolo is a red wine produced in the same region, and black truffles are a local specialty as well – so it makes sense that all of them together taste amazing. A high percentage of eggs and truffle in this recipe makes for a rich, incredibly flavorful taste, and the hand-made shape gives the pasta an extraordinary texture.
