This obscure pasta shape looks similar to smaller shreds of lasagna sheets, and its hearty and large shape stands up to rich meat sauces and hearty ragus. Setaro have been making pasta in Torre Annunziata in Naples the same way for more than 80 years, using fresh semolina flour that is minimally processed for maximum flavor. This pasta is dried at low temperatures for a long period of time, giving it its distinct perfectly chewy texture.
Note: All pastas should be cooked until al dente. There is no specific cook time on these pasta bags. You are encouraged to start tasting the pasta about 10 minutes in to the boiling time!
