Strozzapreti have what may be the most alarming name of all of the pasta shapes -it literally means “priest stranglers,” though nobody can agree on why (some believe it’s because their shape is similar to a priest’s collar, others say it’s a little more sinister). But there’s nothing alarming about this twisty pasta from Emilia-Romagna! With an open tube shape, this medium-length pasta is super versatile, great with simple tomato sauces, fresh seafood, or chunky vegetable blends. Setaro have been making pasta in Torre Annunziata in Naples the same way for more than 80 years, using fresh semolina flour that is minimally processed for maximum flavor.
Note: All pastas should be cooked until al dente. There is no specific cook time on these pasta bags. You are encouraged to start tasting the pasta about 10 minutes in to the boiling time!
