Nodi marini (“sailor’s knots”) are loosely twisted coils of pasta, so named because they resemble the complicated rope knots sailors have mastered. One of Giada’s favorite shapes, the short curls trap sauces like bolognese or a hearty ragu, making each knotty bite a delight. The Setaro family have been making pasta the same way for more than 80 years. The secret to its incredible flavor is in the fresh semolina flour they use, which is minimally processed to retain its nutritional value. When your product only has two ingredients, flour and water, you’d better make sure they’re the best!
Note: All pastas should be cooked until al dente. There is no specific cook time on these pasta bags. You are encouraged to start tasting the pasta about 10 minutes in to the boiling time!
