Since 1939, the Setaro family have been making pasta on a winding street in Torre Annunziata in Naples—the same street, in fact, where Giada’s grandfather once made his own pasta. The semolina flour they use is minimally processed, making for a more robust, flavorful product than pastas made in the U.S. Cappelletti (“little hats”) are modeled on the shape of either a military trooper’s cap or the medieval headwear of a Catholic cardinal, depending on who you ask. No matter their inspiration, these curvy pasta rounds are perfect in soup, where their swoops and curls hold pockets of delicious broth.
Note: All pastas should be cooked until al dente. There is no specific cook time on these pasta bags. You are encouraged to start tasting the pasta about 10 minutes in to the boiling time!
