You can see the farmer’s hand in every bag – literally! Each bag is labeled with the name of the person who grew it. Carried back to Italy from Egypt by the Roman legion, farro has been a staple of the Italian diet for millennia. A rustic form of wheat, it requires a longer cooking time, but yields a chewy, never-mushy grain with a deep nutty flavor. Slow-simmer it in a hearty fall soup or substitute it into a farrotto for a delicious twist on your everyday risotto.
