A loosely curved short pasta with an unpredictably twisty pattern, fiorentini are rarely found in the U.S. Those who have tried it are devotees thanks to its ruffled charm and the way it compliments a wide range of chunky sauces, from a vegetable-focused blend of roasted eggplant or sweet butternut squash to a sausage ragu. Made by the Setaro family on the same street in Torre Annunziata where they have been making pasta since 1939 — the same street, in fact, where Giada’s grandfather once made his own pasta! — this pasta is robust and flavorful thanks to the minimally processed semolina flour.
Note: All pastas should be cooked until al dente. There is no specific cook time on these pasta bags. You are encouraged to start tasting the pasta about 10 minutes in to the boiling time!
