This pasta shape is similar to rigatoni, but there’s more than meets the eye. The Italian word “elica” translates to spiral or helix, referring to the ridges that spiral down the tube of the pasta. These deep-set ridges help sauces cling to the pasta, ensuring every bite is full of flavor. The perfect vessel for rich and creamy sauces – think pasta alla vodka or decadent ragus – use this pasta in any place you’d think to use rigatoni for a bit of an upgrade. Setaro have been making pasta in Torre Annunziata in Naples the same way for more than 80 years, using fresh semolina flour that is minimally processed for maximum flavor. This pasta is dried at low temperatures for a long period of time, giving it its distinct perfectly chewy texture.
