The beauty of bucatini isn’t just that its a thicker noodle than the more common spaghetti: it has a hole running through the center. That hollow center gets filled with sauce, making it the perfect medium for creamy, velvety sauces like alfredo, vodka sauce or cacio e pepe. Made by the Setaro family on the same street in Torre Annunziata where they have been making pasta since 1939 — the same street, in fact, where Giada’s grandfather once made his own pasta! — this pasta is robust, delightfully chewy and flavorful thanks to the minimally processed semolina flour.
Note: All pastas should be cooked until al dente. There is no specific cook time on these pasta bags. You are encouraged to start tasting the pasta about 10 minutes in to the boiling time!
