From Modena, the spiritual home of balsamic vinegar (and the only place in the world where it can be produced, aside from neighboring Reggio Emilia, according to its IGP certification), this is one of the rare that follows the traditional methods to produce a truly organic product. The vinegar starts with the juice of organically grown local grapes, which are cooked, then aged in oak barrels for 12 years. That long aging process gives the vinegar its signature sweet, syrupy nature as it evaporates slowly, concentrating the flavors as the years pass. What you get is a rich, dense balsamic that can be used nearly anywhere – a little goes a long way.
