Silky smooth, and deliciously nutty, this chestnut cream from Agrimontana is the pinnacle of the pastry maker’s art. It’s brilliant in its simplicity, made only with the prized chestnuts that grow in the northwestern Piedmont region, Madagascar vanilla, and cane sugar, pureed on specially calibrated machines until it reaches the perfect luscious texture. The result is an old-fashioned sweet with a delicate, round taste that’s perfect for sweets of all kinds.

Agrimontana hand-selects the Piedmont chestnuts it uses for its marrons glacés, which are then treated to a nine-day pampering session to ensure they are as deliciously plump and sweet as possible. They’re peeled by hand and candied in a sugar syrup that is enriched by the intense perfume of Madagascar vanilla. The chestnuts used to make this smooth puree are of the same high quality as those they sell candied whole, and you can taste the excellence in every bite.

In the northwest of Italy, Piedmont shares a border with France and Switzerland. It’s a region that is reknowned for its agricultural bounty, home to decadent specialties including white truffles, barolo, and arborio rice. Azienda Agrimontana’s history in Piedmont began 50 years ago, when Cesare Bardini began selling jams, candied fruit, and chestnuts in 1972. Bardini had one mission: to share the natural riches of his home across Italy.

To this day, Agrimontana is dedicated to creating deliciously clean products using traditional methods, without added colors, preservatives, or flavorings. They focus on sustainable agriculture that preserves the beauty of their home while encouraging biodiversity.
This smooth chestnut puree is mildly nutty and fragrant with Madagascar vanilla, perfect for a multitude of sweet applications. Fold it into mousse, buttercream, whipped cream, or gelato. It can also be used in pastries, such as a traditional Mont Blanc, which was created in the Piedmont region in the late 1800s.
