In fact, Italy has a long history of taking gluten intolerance very seriously, and was one of the first countries to devote time and effort into finding gluten-free alternatives in the kitchen. Restaurants and food producers alike have made great efforts to ensure that those with special dietary needs are able to enjoy all the traditional foods Italians love—and the results are delicious.

Here, we’ve collected all of our favorite wheat-free Italian goodies so you can find safe-to-eat versions of everything from pasta to cookies all in one spot.  Because quality is so important to Italian chefs, you won’t find any funky additives here. Instead, these products are all made from wholesome, all-natural ingredients, carefully crafted and blended to make the most delicious gluten-free foods you’ve ever tried.

We’ve found brilliant flours for baking, pasta, and fried foods, all made from all-natural blends of gluten-free grains. There’s the best wheat-free pasta we’ve ever tried, from Massimo Zero, which is virtually indistinguishable from our favorite wheat-based varieties. You can even use the starchy cooking water to thicken your sauce!

Then there are plenty of delicious Italian foods and snacks that just happen to be gluten-free, like the famous amaretti cookies from Saronno, just north of Milan. These crunchy little gems are made of almond-scented apricot kernels, sugar, and egg whites according to a recipe that dates back to the Middle Ages. They’re Giada’s favorite treat for an afternoon espresso break, and can even be crumbled and used in baking, too!
