Introducing My New Restaurant: Pronto!

Giada's new Las Vegas cafe captures the spirit of Italy.


For the last year or so, I've quietly been working on a new project, and I'm thrilled to say it's finally ready to share with you all: Pronto. I just love bringing my food directly to diners at my restaurant, Giada, in the Cromwell Hotel in Las Vegas, and I've been looking for another opportunity to cook for even more of you. But I didn't just want to open another Giada - I wanted to do something different, something that helps spread the love for Italian culture (and food!) here in the U.S.
Pronto is inspired by the all-day cafes of Italy where friends meet for everything from a quick bite on the go to a leisurely meal over wine. Everything from breakfast to cocktails are available in these welcoming spots, which act more like community meeting places than simple restaurants. Everyone is welcome to eat what you like when you like, and relax in the company of friends, family, or a good book.
In the mornings, we'll have cornetti, the croissant-like pastry that is a staple of Italian breakfasts, along with made-to-order smoothies and my favorite oatmeal made with olive oil, citrus, and almonds. For heartier appetites (or for the morning after a late night out!), the antipasto breakfast sandwich, packed with mortadella, bacon, prosciutto cotto, mozzarella, and egg, is sure to be a crowd-pleaser.



During the day, there will be pressed-to-order panini, salads, my take on classics like lobster rolls and grilled cheese, and a few favorites from my restaurant that I just couldn't leave behind, including my waldorf panzanella. Platters of salumi and cheeses are perfect for nibbling on by the pool or whetting your appetite before dinner. And you can't have cheese without wine! The wine bar will be pouring a hand-picked selection of Italian and California wines - my two homes - plus a few signature cocktails just the way I like them, with less sugar than some of the cocktails you may be used to seeing around town.
And it wouldn't be a Giada project without sweets! The pastry case will have my signature lemon ricotta cookies and a selection of gorgeous cakes by the slice. But what I'm most excited about? The gelato bar. Jade and I ate gelato every day in Italy over the summer for research (best tasting research ever!) to narrow down the flavors I wanted to share with my American fans. Of course this chocolate lover is thrilled about the dark chocolate gelato, which took a lot of work to perfect, but I also love the tart lemon flavor, which is so refreshing on a hot desert day.  
Pronto opens early 2018 in Caesars Palace. I hope to see you there!
