Have Lunch With Me in Vegas

Pronto by Giada is opening soon - here's what's on the menu!

Even though the holidays are behind us, I've got those Christmas Eve jitters, waiting excitedly to open my presents - but this time, the gift to be opened is my new restaurant in Caesars Palace in Las Vegas, Pronto by Giada! It's been a long time in the making, which is why my excitement is truly off the charts that we have an official opening date: Saturday, February 10th!

Pronto is inspired by the all-day cafes of Italy where friends meet for everything from a quick bite on the go to a leisurely meal over wine. Everything from breakfast to cocktails are available in these welcoming spots, which act more like community meeting places than simple restaurants. Everyone is welcome to eat what you like when you like, and relax in the company of friends, family, or a good book.

One of the most exciting parts of the recipe development process was lunch! At Giada, my first restaurant, we focused on dinner - delicious pastas, pizzas, and hearty entrees. But you know how I love to eat light, clean meals with lots of veggies, and I wanted to bring more of those sorts of dishes to you. Lunch was the perfect solution! Let's face it; there are a lot of decadent meals to be had in Vegas. With Pronto's all-day menus, you've always got a healthy option in your back pocket - it's just the place I've wanted to be able to eat at myself.

Since we had so much fun with that lunch menu, I wanted to give you a sneak peek at some of the dishes we'll be serving. For a quick stop while you're doing the town, touring the casinos or on your way to a matinee, you can't beat a sandwich, like my Italian-inspired Muffuletta, a New Orleans classic that combines yummy salumi, provolone, and a savory olive spread. Or there's the Grilled Vegetable, Herb and Goat Cheese Sandwich, for a healthy dose of delicious veggies packed with bright, fresh herbs and tangy cheese. I've also found a way to sneak in some West Coast vibes with a California-Style Chopped Salad with Shrimp, which will give you that clean protein you need to power through a long day of sightseeing.
