Ingredients
- 1 tablespoon ready-made hummus
- 1 tablespoon lemon juice
- 1 1/2 tablespoons extra-virgin olive oil
- 1/8 teaspoon kosher salt
- 1/4 cup canned black-eyed peas (drained and rinsed)
- 1/3 cup red seedless grapes (cut in half)
- 1 celery stalk (chopped)
- 3 tablespoons crumbled feta cheese
- 1 cup chopped radicchio (about 1/4 of a head)
- 1 cup loosely packed chopped romaine (about 2 leaves)
- 1 tablespoon slivered almonds
Instructions
- In a small bowl, whisk together the hummus, lemon juice, olive oil, and salt. Pour the dressing into the bottom of a wide-mouth quart canning jar or any resealable container. On top of the dressing layer the peas, grapes, celery, feta cheese, radicchio, romaine, and almonds. Seal the container and, when you're ready to eat it, shake to coat and mix the entire salad in the dressing.
