Ingredients

  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1 1/2 cups sugar
  • 1 cup grapeseed oil
  • 3 large eggs
  • 1 tablespoon vanilla extract
  • 4 ripe bananas (peeled and coarsely mashed (about 1 3/4 cups))
  • 1 1/2 cups semi sweet chocolate chips

Instructions

  1. Preheat the oven to 350 degrees F. Spray a 10 1/2 by 5 1/2 by 3 inch loaf pan with nonstick cooking spray. Line the loaf pan across the short length with a sheet of parchment paper so there is 1 inch over hang on either side.
  2. Whisk the flour, baking soda, salt, baking powder, and cinnamon in a medium bowl to blend. Whisk the sugar, oil, eggs, and vanilla in a large bowl until fulling incorporated. Stir in the banana. Add the dry ingredients and chocolate chips and fold them in just until blended. Do not over mix.
  3. Pour the batter into the prepared pan and bake for 1 hour and 5 minutes or until a toothpick inserted in the center comes out clean. Allow to cool for 30 minutes in the pan before removing the loaf to a wire rack to cool completely.

    Came out awesome. I did, however, change the recipe and used 3/4 cup coconut sugar and ` cup Stevia. They were the only sweeteners I had on hand. Also, I had some tart cherries, so I threw those in there as well. Came out fantastic. Thank you.
